The juice is sent to the evaporators where it is concentrated into syrup. The syrup undergoes a progressive series of steps in the vacuum pans to produce industrial raw sugar. Typically repeated 3 times, Molasses is the end product with approximately 2/3 of the crystal seed sugar is dissolved within the syrup, therefore explaining why molasses is extremely thick. The entire refining process takes 20 to 28 hours.
